Instructions

  1. Cook the rice: Combine 1/2 cup uncooked white rice with 1 cup water in a small saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed and rice is tender. Keep covered.
  2. Prepare the beef: In a small bowl, toss 4 ounces beef sirloin with 1 teaspoon cornstarch and 1/2 tablespoon soy sauce. Set aside for a few minutes.
  3. In a small bowl, whisk together the remaining 1/2 tablespoon soy sauce, 1/4 cup water or beef broth, and 1/2 teaspoon brown sugar to create the stir-fry sauce.
  4. Heat 1 teaspoon sesame oil in a wok or large skillet over medium-high heat. Add the beef and stir-fry for 2-3 minutes until browned. Remove beef from skillet and set aside.
  5. Add 1 clove minced garlic, 1/2 inch grated fresh ginger, and 1/2 cup broccoli florets to the skillet. Stir-fry for 3-4 minutes until broccoli is tender-crisp.
  6. Return beef to the skillet. Pour in the prepared stir-fry sauce. Cook, stirring, for 1-2 minutes until the sauce thickens and coats the beef and broccoli.
  7. Serve the beef and broccoli stir-fry immediately over the white rice. Garnish with red pepper flakes if desired.

Notes

Ensure your beef is sliced very thinly for quick cooking. A good trick is to partially freeze the beef for about 15-20 minutes before slicing.
