Ingredients
- 1 pound ground beef (80/20 lean)
- 1 tablespoon olive oil
- 1 red bell pepper (medium, thinly sliced)
- 2 cup broccoli florets (fresh or frozen)
- 3 clove garlic (minced)
- 1 tablespoon fresh ginger (grated)
- 0.5 cup beef broth
- 0.25 cup soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon cornstarch
- 1 teaspoon sesame oil
- 0.5 teaspoon black pepper
- 2 package instant white rice
Instructions
- Cook instant white rice according to package directions. While rice cooks, prepare the stir-fry.
- In a small bowl, whisk together 1/2 cup beef broth, 1/4 cup soy sauce, 1 tablespoon brown sugar, 1 tablespoon cornstarch, and 1 teaspoon sesame oil. Set aside.
- Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it up, until browned, about 5-7 minutes. Drain any excess fat. Remove beef from skillet and set aside.
- Add the thinly sliced red bell pepper and broccoli florets to the skillet. Stir-fry for 3-5 minutes until vegetables are crisp-tender. If using frozen broccoli, add a splash of water and cover for 2-3 minutes to steam.
- Add the minced garlic and grated fresh ginger to the vegetables and stir-fry for 1 minute until fragrant.
- Return the cooked ground beef to the skillet. Give the prepared sauce a quick whisk, then pour it over the beef and vegetables. Cook, stirring constantly, until the sauce thickens, about 1-2 minutes.
- Serve the Beef and Broccoli Stir-Fry immediately over the cooked instant white rice, with 1/2 teaspoon black pepper.
Notes
For a little heat, add a pinch of red pepper flakes with the garlic and ginger. Adjust soy sauce to taste if you prefer lower sodium.
