Ingredients

Instructions

  1. Cook instant white rice according to package directions. While rice cooks, prepare the stir-fry.
  2. In a small bowl, whisk together 1/2 cup beef broth, 1/4 cup soy sauce, 1 tablespoon brown sugar, 1 tablespoon cornstarch, and 1 teaspoon sesame oil. Set aside.
  3. Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it up, until browned, about 5-7 minutes. Drain any excess fat. Remove beef from skillet and set aside.
  4. Add the thinly sliced red bell pepper and broccoli florets to the skillet. Stir-fry for 3-5 minutes until vegetables are crisp-tender. If using frozen broccoli, add a splash of water and cover for 2-3 minutes to steam.
  5. Add the minced garlic and grated fresh ginger to the vegetables and stir-fry for 1 minute until fragrant.
  6. Return the cooked ground beef to the skillet. Give the prepared sauce a quick whisk, then pour it over the beef and vegetables. Cook, stirring constantly, until the sauce thickens, about 1-2 minutes.
  7. Serve the Beef and Broccoli Stir-Fry immediately over the cooked instant white rice, with 1/2 teaspoon black pepper.

Notes

For a little heat, add a pinch of red pepper flakes with the garlic and ginger. Adjust soy sauce to taste if you prefer lower sodium.
