Beef and Broccoli Stir-Fry

  1. In a small bowl, whisk together 1/2 cup of beef broth, 1/4 cup of soy sauce, 1 tablespoon of brown sugar, 1 tablespoon of cornstarch, 1 teaspoon of minced ginger, and 1/2 teaspoon of minced garlic. Set aside.
  2. Pat the 1 pound of beef sirloin or flank steak dry and sprinkle with 1/4 teaspoon of black pepper.
  3. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the beef in a single layer and stir-fry for 2-3 minutes until browned. Remove beef from the skillet and set aside.
  4. Add 2 cups of fresh broccoli florets to the skillet and stir-fry for 3-5 minutes, until tender-crisp. If needed, add a splash of water to help steam the broccoli.
  5. Return the cooked beef to the skillet with the broccoli. Give the prepared sauce mixture another quick whisk and pour it over the beef and broccoli. Cook, stirring constantly, for 1-2 minutes until the sauce thickens and coats everything.
  6. Serve the Beef and Broccoli Stir-Fry immediately over 2 cups of hot cooked jasmine rice.

Notes

You can use pre-cooked microwaveable jasmine rice for an even faster meal.
