Beef and Broccoli Stir-Fry

Ingredients
- 1 tablespoon olive oil
- 1 pound beef sirloin or flank steak (thinly sliced against the grain)
- 0.25 teaspoon black pepper (ground)
- 2 cup fresh broccoli florets
- 0.5 cup beef broth
- 0.25 cup soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon cornstarch
- 1 teaspoon ginger (minced)
- 0.5 teaspoon garlic (minced)
- 2 cup jasmine rice (cooked)
Instructions
- In a small bowl, whisk together 1/2 cup of beef broth, 1/4 cup of soy sauce, 1 tablespoon of brown sugar, 1 tablespoon of cornstarch, 1 teaspoon of minced ginger, and 1/2 teaspoon of minced garlic. Set aside.
- Pat the 1 pound of beef sirloin or flank steak dry and sprinkle with 1/4 teaspoon of black pepper.
- Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the beef in a single layer and stir-fry for 2-3 minutes until browned. Remove beef from the skillet and set aside.
- Add 2 cups of fresh broccoli florets to the skillet and stir-fry for 3-5 minutes, until tender-crisp. If needed, add a splash of water to help steam the broccoli.
- Return the cooked beef to the skillet with the broccoli. Give the prepared sauce mixture another quick whisk and pour it over the beef and broccoli. Cook, stirring constantly, for 1-2 minutes until the sauce thickens and coats everything.
- Serve the Beef and Broccoli Stir-Fry immediately over 2 cups of hot cooked jasmine rice.
Notes
You can use pre-cooked microwaveable jasmine rice for an even faster meal.
