- 1 pound ground beef (85/15 or 90/10 lean)
- 1 yellow onion (medium, chopped)

- 4 cup broccoli florets (fresh or frozen)

- 1 tablespoon rice vinegar
- 1 teaspoon fresh ginger (grated)
- 1 teaspoon arrowroot starch
- 0.5 teaspoon salt

- 2 cup jasmine rice (uncooked)
- 4 cup water
Instructions
- Start cooking jasmine rice: Combine 2 cups uncooked jasmine rice and 4 cups water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until water is absorbed and rice is tender. Let stand for 5 minutes, then fluff with a fork.
- While rice cooks, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef and chopped yellow onion. Cook, breaking up the beef, until browned and onion is softened, about 8-10 minutes. Drain any excess fat.
- Stir in minced garlic, salt, and black pepper. Cook for 1 minute until fragrant.
- Add broccoli florets and 1/4 cup beef broth to the skillet. Cover and cook for 5-7 minutes, stirring occasionally, until broccoli is tender-crisp.
- In a small bowl, whisk together remaining 1/4 cup beef broth, coconut aminos, rice vinegar, grated fresh ginger, and arrowroot starch until smooth.
- Pour the sauce over the beef and broccoli in the skillet. Stir constantly until the sauce thickens and coats everything, about 1-2 minutes.
- Serve the beef and broccoli skillet over cooked jasmine rice.
