  1. Start cooking jasmine rice: Combine 2 cups uncooked jasmine rice and 4 cups water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until water is absorbed and rice is tender. Let stand for 5 minutes, then fluff with a fork.
  2. While rice cooks, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef and chopped yellow onion. Cook, breaking up the beef, until browned and onion is softened, about 8-10 minutes. Drain any excess fat.
  3. Stir in minced garlic, salt, and black pepper. Cook for 1 minute until fragrant.
  4. Add broccoli florets and 1/4 cup beef broth to the skillet. Cover and cook for 5-7 minutes, stirring occasionally, until broccoli is tender-crisp.
  5. In a small bowl, whisk together remaining 1/4 cup beef broth, coconut aminos, rice vinegar, grated fresh ginger, and arrowroot starch until smooth.
  6. Pour the sauce over the beef and broccoli in the skillet. Stir constantly until the sauce thickens and coats everything, about 1-2 minutes.
  7. Serve the beef and broccoli skillet over cooked jasmine rice.
