  1. Heat 1/4 tablespoon of olive oil in a medium skillet over medium-high heat. Add the diced yellow onion and cook for 3-4 minutes until softened.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Add the lean ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat.
  4. Stir in the low sodium beef broth, dried thyme, low sodium Worcestershire sauce, 1/16 teaspoon of salt, and 1/8 teaspoon of black pepper. Bring to a simmer and cook for 5 minutes, allowing the flavors to meld.
  5. Stir in the rinsed black beans and raw baby spinach. Cook for 2-3 minutes, until the spinach is wilted and everything is heated through.
