  1. Cook the white rice: Combine 2 cups white rice, 4 cups water, and 1/4 teaspoon salt in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed. Remove from heat and let stand, covered, for 5 minutes.
  2. While rice cooks, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 1/2 pounds ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
  3. Add 1 diced yellow onion and 3 minced garlic cloves to the skillet with the beef. Cook for 3-4 minutes until softened.
  4. Stir in 2 teaspoons ground cumin, 1 teaspoon chili powder, 1/2 teaspoon dried oregano, and 1/4 teaspoon black pepper. Cook for 1 minute until fragrant.
  5. Add 2 rinsed and drained cans black beans and 1/2 cup chicken broth to the skillet. Bring to a simmer and cook for 2-3 minutes to heat through.
  6. Assemble bowls: Divide the cooked white rice among serving bowls. Top with the beef and black bean mixture. Garnish generously with diced avocado, chopped fresh cilantro, and a lime wedge.
