Ingredients
- 1 pound ground beef (lean, 90/10 or leaner)
- 1 tablespoon olive oil
- 1 yellow onion (medium, chopped)
- 1 red bell pepper (thinly sliced)
- 1 green bell pepper (thinly sliced)
- 2 clove garlic (minced)
- 1 can diced tomatoes (undrained)
- 1 teaspoon chili powder
- 0.5 teaspoon ground cumin
- 0.5 teaspoon kosher salt
- 0.25 teaspoon black pepper
- 1.5 cup quick-cooking brown rice (uncooked)
- 2 cup water or broth
Instructions
- Cook the quick-cooking brown rice according to package directions, typically by bringing water or broth to a boil, adding rice, simmering for 10-15 minutes, then letting it rest.
- While rice cooks, heat olive oil in a large skillet over medium-high heat. Add the chopped yellow onion and cook for 3-4 minutes until softened.
- Add the ground beef to the skillet with the onion. Break up the meat with a spoon and cook until no longer pink, about 5-7 minutes. Drain any excess grease.
- Stir in the thinly sliced red bell pepper, green bell pepper, and minced garlic. Cook for 3-5 minutes, until vegetables are tender-crisp.
- Add the undrained diced tomatoes, chili powder, ground cumin, kosher salt, and black pepper to the skillet. Bring to a simmer and cook for 5 minutes, allowing flavors to meld.
- Serve the beef and bell pepper mixture hot over the cooked quick brown rice.
Notes
Feel free to add a pinch of red pepper flakes for extra heat if you like it spicy. The quick brown rice keeps this meal super fast.
