Ingredients
- 1.25 pound ground beef (90% lean)
- 1 tablespoon olive oil
- 1 yellow onion (medium, chopped)
- 2 clove garlic (minced)
- 0.5 teaspoon chili powder
- 0.5 teaspoon ground cumin
- 0.25 teaspoon black pepper
- 1 can black beans (rinsed and drained)
- 1 cup frozen corn
- 1 cup white rice (uncooked)
- 2 tablespoon lime juice
- 2 tablespoon fresh cilantro (chopped)
Instructions
- Cook the white rice according to package directions while preparing the other ingredients.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and cook for 5-7 minutes, breaking it up with a spoon, until browned. Drain any excess fat.
- Stir in the yellow onion and garlic, sautéing for 3-4 minutes until softened and fragrant.
- Add the chili powder, ground cumin, and black pepper, stirring for 1 minute until aromatic.
- Stir in the rinsed and drained black beans and frozen corn, cooking for 2-3 minutes until heated through.
- Remove from heat and stir in the lime juice.
- Divide the cooked white rice among serving bowls, then top with the beef and bean mixture. Garnish with chopped fresh cilantro, if desired.
Notes
For a little extra kick, a dash of your favorite hot sauce can be added to individual bowls. Leftovers are excellent for lunch the next day.
