Beef and Bean Power Bowls

  1. Cook the white rice according to package directions while preparing the other ingredients.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and cook for 5-7 minutes, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Stir in the yellow onion and garlic, sautéing for 3-4 minutes until softened and fragrant.
  4. Add the chili powder, ground cumin, and black pepper, stirring for 1 minute until aromatic.
  5. Stir in the rinsed and drained black beans and frozen corn, cooking for 2-3 minutes until heated through.
  6. Remove from heat and stir in the lime juice.
  7. Divide the cooked white rice among serving bowls, then top with the beef and bean mixture. Garnish with chopped fresh cilantro, if desired.

Notes

For a little extra kick, a dash of your favorite hot sauce can be added to individual bowls. Leftovers are excellent for lunch the next day.
