- 1 pound ground beef
- 1 tablespoon olive oil
- 1 yellow onion (medium, chopped)
- 2 clove garlic (minced)
- 15 ounce black beans (rinsed and drained)
- 15 ounce diced tomatoes (undrained)
- 1 cup beef broth
- 2 tablespoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon smoked paprika
- 1 teaspoon salt
- 0.5 teaspoon black pepper (freshly ground)
- 0.5 cup cheddar cheese (shredded, for serving)
- 2 cup corn chips (for serving)
Instructions
- Heat 1 tablespoon olive oil in a large pot or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it apart, until browned, about 5-7 minutes. Drain any excess grease.
- Add the chopped yellow onion and minced garlic to the pot. Cook for 3-4 minutes until the onion softens.
- Stir in the rinsed black beans, diced tomatoes (undrained), beef broth, chili powder, ground cumin, and smoked paprika. Bring to a simmer.
- Reduce heat to low, cover, and let the chili simmer for 10-12 minutes, stirring occasionally, allowing the flavors to meld. Taste and season with salt and black pepper as needed.
- Serve the chili hot, topped with shredded cheddar cheese, and with corn chips or crackers on the side, if desired.
Notes
This chili can be made ahead of time as the flavors tend to deepen overnight. Store leftovers in an airtight container for up to 3 days.
