- 1 pound lean sirloin steak (thinly sliced against the grain)
- 1 tablespoon avocado oil (divided)
- 1 pound fresh asparagus spears (tough ends trimmed and cut into 1-inch pieces)
- 2 clove garlic (minced)
- 1 teaspoon fresh ginger (grated)
- 0.25 cup low-sodium beef broth
- 2 tablespoon low-sodium tamari
- 1 tablespoon rice vinegar
- 0.25 teaspoon black pepper
- 2 tablespoon green onions (chopped)
Instructions
- Heat 1 1/2 teaspoons of avocado oil in a large skillet or wok over medium-high heat. Add sliced lean sirloin steak and stir-fry for 3-5 minutes, until browned on all sides and cooked to your desired doneness. Remove beef from the skillet and set aside.
- Add the remaining 1 1/2 teaspoons of avocado oil to the skillet. Add fresh asparagus spears and stir-fry for 3-4 minutes, until tender-crisp.
- Stir in minced garlic and grated fresh ginger. Cook for 30 seconds until fragrant.
- Return beef to the skillet. Add low-sodium beef broth, low-sodium tamari, rice vinegar, and black pepper. Stir well to coat all ingredients and cook for 1-2 minutes, allowing the sauce to heat through and slightly reduce.
- Serve immediately. Garnish with chopped green onions, if desired.
