Ingredients
- 1 pound ground beef (lean)
- 0.5 cup plain breadcrumbs (refined white breadcrumbs)
- 0.25 cup milk
- 1 egg (large)
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 tablespoon vegetable oil
- 1 cup long grain white rice (uncooked)
- 2 cup water
- 1 pound carrot (peeled, sliced into 1/2-inch thick rounds)
- 1 tablespoon unsalted butter
Instructions
- In a medium bowl, combine lean ground beef, plain breadcrumbs, milk, egg, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix gently until just combined. Form into 8 small patties, about 1/2-inch thick.
- In a medium saucepan, combine uncooked long grain white rice and 2 cups water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed and rice is tender. Keep covered.
- While rice cooks, heat vegetable oil in a large skillet over medium heat. Add patties and cook for 5-7 minutes per side, or until browned and cooked through. Remove patties and set aside, keeping warm.
- Add peeled carrots and 1/4 cup water to a small saucepan. Cover and steam over medium-high heat for 5-7 minutes, until very tender. Drain any remaining water, then stir in unsalted butter and remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Fluff cooked rice with a fork. Serve meat patties with a side of rice and tender cooked carrots.
Notes
Ensure carrots are cooked until very soft for easy digestion. For fluffier rice, avoid lifting the lid during cooking and let it rest for a few minutes after the heat is off.
