Ingredients
- 1.5 cup pearl barley (rinsed)
- 3.5 cup water
- 2 sweet potatoes (peeled, cut into 1/2-inch cubes)
- 1 can cannellini beans (15 oz can, rinsed and drained)
- 3 cup baby spinach (roughly chopped)
- 2 tablespoon olive oil
- 2 tablespoon pure maple syrup
- 1.5 tablespoon Dijon mustard
- 1.5 tablespoon apple cider vinegar
- 0.75 teaspoon salt
- 0.25 teaspoon black pepper (ground)
Instructions
- Combine pearl barley, water, and 1/4 teaspoon salt in a medium saucepan. Bring to a boil over high heat, reduce heat to low, cover, and simmer for 15 minutes until tender and chewy. Drain any excess water if necessary and set aside.
- While barley simmers, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the diced sweet potatoes with 1/4 teaspoon salt and black pepper. Cover and cook for 8 to 10 minutes, stirring twice, until sweet potatoes are tender and lightly browned.
- In a small bowl, whisk together pure maple syrup, Dijon mustard, apple cider vinegar, the remaining 1 tablespoon olive oil, and the remaining 1/4 teaspoon salt.
- Distribute baby spinach evenly into the bottom of 6 containers. Top with warm barley (which gently wilts the greens), sautéed sweet potatoes, and cannellini beans.
- Drizzle the maple dijon dressing evenly over each bowl.
Notes
Enjoy cold or microwave for 60 to 90 seconds. The hearty pearl barley retains a pleasant chewy bite for up to 4 days.
