Instructions
- Season the 4 ounces thinly sliced chicken breast with 1/2 teaspoon dried oregano, 1/4 teaspoon salt, and 1/8 teaspoon black pepper.
- Heat 1/2 tablespoon olive oil in a medium skillet over medium-high heat. Add the seasoned chicken and cook for 3-5 minutes per side, until cooked through and golden brown.
- While chicken cooks, microwave the 1/2 cup frozen broccoli florets according to package directions, about 3-5 minutes, until tender-crisp.
- In a small bowl, whisk together 2 tablespoons balsamic vinegar and 1 teaspoon honey. Once chicken is cooked, pour the balsamic mixture over the chicken in the skillet. Simmer for 1-2 minutes, stirring to coat the chicken, until the sauce slightly thickens.
- Serve the glazed chicken immediately with the steamed broccoli.
Notes
For a thicker glaze, simmer the balsamic and honey mixture in a separate small saucepan for a few minutes before adding to the cooked chicken.
