  1. Preheat your oven to 400°F and line a large baking sheet with parchment paper.
  2. In a large mixing bowl, gently combine the ground beef, beaten egg, garlic powder, dried basil, dried oregano, 1 teaspoon of the salt, and 1/4 teaspoon of the black pepper until just mixed.
  3. Shape the beef mixture into 24 evenly sized meatballs (about 1.5 inches each) and place them on the baking sheet. Bake for 16 to 18 minutes until cooked through to an internal temperature of 160°F.
  4. While meatballs bake, simmer the balsamic vinegar in a small saucepan over medium-low heat for 3 to 4 minutes until slightly reduced and syrupy. Toss the warm baked meatballs in the reduction.
  5. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for 30 seconds until fragrant, then add the baby spinach, remaining 1/2 teaspoon of salt, and remaining black pepper, tossing for 2 minutes until wilted. Serve the glazed meatballs over the sautéed spinach.
