Ingredients
- 1 cooking spray
- 4 tilapia fillets
- 4 tomatoes (medium, peeled, chopped)
- 2 tablespoon olive oil
- 1.5 teaspoon thyme
- 0.25 cup black olives (pitted, diced)
- 0.25 teaspoon red pepper flakes
- 2 clove garlic (minced)
- 0.5 cup red onion (diced)
- 1 tablespoon lime juice
- 1 parsley (for garnish)
- 1 lemon wedge (for garnish)
Instructions
- Preheat oven to 400 °F.
- Spray baking dish with cooking spray.
- Arrange tilapia fillets in the baking dish. The dish should be large enough so the fillets do not overlap.
- Mix tomatoes, olive oil, thyme, black olives, red pepper flakes, garlic, red onion, and lime juice in a bowl.
- Spoon the tomato mixture evenly over the fillets.
- Bake uncovered for 15 to 20 minutes or until the fish flakes easily with a fork.
- Garnish with parsley and a lemon wedge, and serve.
