- 1 pound chicken breast (boneless, skinless)

- 0.5 teaspoon onion powder
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper (ground)
- 1 cup chicken broth
- 0.5 cup heavy cream
- 0.5 cup Parmesan cheese (grated)
- 1 tablespoon fresh parsley (chopped)
- 1 package frozen green beans (10 ounces)
- 1 instant mashed potatoes (5.3 ounces)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish with olive oil. Place the chicken breasts in the prepared dish.
- Season chicken evenly with garlic powder, onion powder, salt, and black pepper.
- In a small bowl, whisk together the chicken broth, heavy cream, and grated Parmesan cheese. Pour the sauce over and around the chicken breasts.
- Bake for 18-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). While the chicken bakes, prepare the frozen green beans according to package directions (e.g., microwave or stovetop steam) and cook the instant mashed potatoes according to package instructions.
- Remove chicken from oven. If desired, sprinkle with fresh parsley before serving alongside the green beans and mashed potatoes.
Notes
Check chicken for doneness at 18 minutes; thicker breasts may need an extra minute or two. The creamy sauce is great for soaking up with the mashed potatoes.
