Ingredients
- 2.5 cup rolled oats
- 1.5 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 0.5 teaspoon salt
- 2 cup unsweetened almond milk
- 2 eggs (large)
- 0.25 cup pure maple syrup
- 1 teaspoon vanilla extract
- 2 Honeycrisp apples (medium, cored and diced)
Instructions
- Preheat your oven to 375 degrees Fahrenheit and grease an 8x8-inch baking dish with nonstick spray.
- In a medium mixing bowl, whisk together rolled oats, ground cinnamon, baking powder, and salt.
- In a separate bowl, whisk unsweetened almond milk, eggs, pure maple syrup, and vanilla extract until thoroughly combined.
- Spread diced Honeycrisp apples evenly across the bottom of the prepared baking dish. Pour dry oat mixture over the apples, then pour the wet milk and egg mixture evenly over the top.
- Gently shake the dish or press lightly with a spoon so all oats are submerged in the liquid.
- Bake for 25 minutes until the center is set and the edges are lightly golden. Allow to cool for 10 minutes before slicing into 8 equal squares.
Notes
Squares can be individually wrapped and refrigerated for up to 5 days. Eat cold or warm in the microwave for 30 seconds.
