- 1.5 pound chicken thighs (boneless, skinless, cut into 1-inch pieces)
- 4 ounce green curry paste
- 2 can coconut milk (full-fat)
- 2 tablespoon fish sauce
- 1 tablespoon brown sugar
- 0.5 cup chicken broth
- 1 red bell pepper (thinly sliced)
- 1 cup bamboo shoots (sliced, canned, drained)
- 1 cup snap peas
- 0.25 cup fresh basil leaves
- 0.5 cup jasmine rice (uncooked)
Instructions
- Cook the jasmine rice according to package directions while you prepare the curry.
- Heat 1 tablespoon of coconut oil in a large pot or Dutch oven over medium heat. Add the chicken thigh pieces and cook until lightly browned on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.
- Add the green curry paste to the pot and cook for 1-2 minutes, stirring constantly, until fragrant.
- Slowly whisk in both cans of full-fat coconut milk until smooth. Stir in the fish sauce, brown sugar, and chicken broth. Bring the mixture to a gentle simmer.
- Return the cooked chicken to the pot. Add the sliced red bell pepper, sliced bamboo shoots, and snap peas. Simmer for 10-15 minutes, or until the vegetables are tender-crisp and the chicken is cooked through.
- Stir in the fresh basil leaves just before serving. Serve the Thai green curry hot over jasmine rice.
