  1. Cook the jasmine rice according to package directions while you prepare the curry.
  2. Heat 1 tablespoon of coconut oil in a large pot or Dutch oven over medium heat. Add the chicken thigh pieces and cook until lightly browned on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.
  3. Add the green curry paste to the pot and cook for 1-2 minutes, stirring constantly, until fragrant.
  4. Slowly whisk in both cans of full-fat coconut milk until smooth. Stir in the fish sauce, brown sugar, and chicken broth. Bring the mixture to a gentle simmer.
  5. Return the cooked chicken to the pot. Add the sliced red bell pepper, sliced bamboo shoots, and snap peas. Simmer for 10-15 minutes, or until the vegetables are tender-crisp and the chicken is cooked through.
  6. Stir in the fresh basil leaves just before serving. Serve the Thai green curry hot over jasmine rice.
