- 1.5 pound chicken thigh (boneless, skinless, cut into 1.5-inch pieces)
- 1 tablespoon browning sauce
- 1 teaspoon black pepper
- 1 teaspoon salt

- 1 yellow onion (medium, chopped)
- 3 clove garlic (minced)
- 1 red bell pepper (diced)
- 1 green bell pepper (diced)
- 2 green onions (chopped)
- 1 fresh thyme
- 1 Scotch bonnet pepper (small, whole)
- 0.25 cup ketchup
- 2 tablespoon brown sugar
- 1 tablespoon soy sauce
- 2 cup chicken broth
- 2 pound yellow yam (peeled, cut into 2-inch chunks)
- 0.25 cup butter (softened)
- 0.25 cup milk
- 1 pound green beans (trimmed)
Instructions
- Season the 1 1/2 pounds chicken thighs with 1 tablespoon browning sauce, 1 teaspoon black pepper, and 1 teaspoon salt. Allow to marinate for 15-20 minutes.
- Heat 2 tablespoons vegetable oil in a large pot or Dutch oven over medium-high heat. Sear the seasoned chicken in batches until well browned on all sides. Remove chicken and set aside.
- In the same pot, add the 1 medium yellow onion, 3 cloves garlic, 1 diced red bell pepper, 1 diced green bell pepper, 2 chopped green onions, 1 sprig fresh thyme, and 1 whole Scotch bonnet pepper (if using). Sauté for 5-7 minutes until vegetables are softened and fragrant.
- Stir in 1/4 cup ketchup, 2 tablespoons brown sugar, and 1 tablespoon soy sauce. Cook for 2 minutes, stirring constantly.
- Return the seared chicken to the pot. Pour in 2 cups chicken broth. Bring to a simmer, then reduce heat to low, cover, and cook for 30-35 minutes, or until the chicken is cooked through and tender, and the sauce has thickened.
- While the chicken stews, prepare the mashed yams. Place the 2 pounds yellow yam (or white sweet potato) chunks in a large pot and cover with cold water. Bring to a boil and cook for 20-25 minutes, or until very tender. Drain well.
- Mash the cooked yams with 1/4 cup softened butter, 1/4 cup milk, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until smooth and creamy. Adjust seasoning to taste.
- Steam the 1 pound fresh green beans until tender-crisp, about 5-7 minutes. Season lightly with salt.
- Remove the thyme sprig and Scotch bonnet pepper (if used) from the stew. Taste the stew and adjust salt and pepper if needed. Serve the Authentic Brown Stew Chicken alongside the creamy mashed yams and steamed green beans.
Notes
If yellow yam is unavailable, white sweet potatoes make a good substitute for mashed yam. The browning sauce is primarily for color; if you don't have it, the dish will still be delicious but lighter in hue.
