Ingredients
- 1 cup rolled oats
- 2 ounce vanilla whey protein powder
- 1 cup plain Greek yogurt (nonfat)
- 1 cup unsweetened almond milk
- 1 tablespoon chia seeds
- 1 teaspoon ground cinnamon
- 1 tablespoon maple syrup
- 1 Honeycrisp apple (medium, cored and diced)
- 2 tablespoon walnuts (chopped)
Instructions
- In a medium mixing bowl, whisk together 1 cup rolled oats, 2 ounces vanilla whey protein powder, 1 tablespoon chia seeds, and 1 teaspoon ground cinnamon until evenly combined.
- Add 1 cup plain Greek yogurt, 1 cup unsweetened almond milk, and 1 tablespoon maple syrup. Stir thoroughly with a spoon or spatula until all protein powder is dissolved and no dry pockets remain.
- Fold in half of the diced Honeycrisp apple.
- Divide the oat mixture evenly between two airtight jars or bowls. Top each portion with the remaining diced Honeycrisp apple and 1 tablespoon of chopped walnuts.
- Seal the containers and refrigerate for at least 4 hours, or overnight, until thick and creamy before serving chilled.
Notes
Store in sealed mason jars in the refrigerator for up to 4 days. If the oats thicken too much overnight, stir in an extra splash of almond milk before eating.
