Ingredients
- 1.5 pound pork chops (bone-in, about 1-inch thick)
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper (freshly ground)
- 1 tablespoon olive oil
- 0.5 yellow onion (medium, thinly sliced)
- 1 apple (cored and sliced)
- 0.75 cup apple cider
- 1 tablespoon apple cider vinegar
- 1.5 pound russet potatoes (peeled and quartered)
- 0.25 cup milk
- 1 tablespoon butter
- 0.5 pound Brussels sprouts (trimmed and halved)
Instructions
- Preheat oven to 400°F. Pat pork chops dry and season with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
- Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat. Sear pork chops for 3-4 minutes per side until golden brown. Remove pork chops from skillet and set aside.
- Add sliced yellow onion and sliced apple to the skillet. Sauté for 5-7 minutes until softened. Pour in 3/4 cup apple cider and 1 tablespoon apple cider vinegar, scraping up any browned bits. Simmer for 2-3 minutes to reduce slightly.
- Return pork chops to the skillet, nestling them into the apple mixture. Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until pork chops reach an internal temperature of 145°F. While the chops cook, prepare the sides.
- Place 1 1/2 pounds Russet potatoes in a pot and cover with cold water. Bring to a boil and cook for 15-20 minutes, or until fork-tender. Drain, then mash with 1/4 cup milk, 1 tablespoon butter, and the remaining 1/4 teaspoon salt and 1/8 teaspoon black pepper until creamy.
- On a separate baking sheet, toss 1/2 pound Brussels sprouts with 1/2 tablespoon olive oil, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Roast in the oven with the pork for the last 10-15 minutes, until tender and slightly caramelized.
- Serve the Apple Cider Glazed Pork Chops with mashed potatoes and roasted Brussels sprouts.
Notes
Make sure not to overcook the pork chops to keep them tender and juicy. They will continue to cook slightly after removal from the oven.
