- 28 ounce extra firm tofu (drained, pressed, and crumbled)
- 1 can black beans (rinsed and drained)
- 4 cup baby spinach (fresh)
- 1 tablespoon olive oil (extra virgin)
- 1 jalapeno pepper (seeded and finely diced)
- 1 tablespoon ancho chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 0.75 teaspoon sea salt
- 1 cup plain nonfat Greek yogurt
- 1 tablespoon lime juice (freshly squeezed)
- 0.5 cup cotija cheese (crumbled)
- 2 tablespoon fresh cilantro (chopped)
Instructions
- In a small bowl, whisk together plain nonfat Greek yogurt, lime juice, and 1/4 teaspoon of the sea salt to create the lime crema, then set aside.
- Heat olive oil in a large nonstick skillet over medium-high heat. Add diced jalapeno pepper and crumbled extra firm tofu, sautéing for 6 to 8 minutes until the tofu begins to turn golden around the edges.
- Add ancho chili powder, ground cumin, dried oregano, garlic powder, and the remaining 1/2 teaspoon of sea salt to the skillet, stirring continuously for 1 minute until fragrant.
- Fold in black beans and baby spinach, cooking for 2 to 3 minutes until the spinach is fully wilted and the beans are heated through.
- Remove from heat, divide into bowls, and top each serving with a dollop of the lime crema, crumbled cotija cheese, and fresh cilantro.
Notes
Keeps well in an airtight container in the refrigerator for up to 4 days. Store the lime crema separately and add after reheating.
