  1. In a medium saucepan, combine the rinsed quinoa and 2 cups of water. Bring to a boil over high heat, then reduce heat to low, cover, and simmer for 15 minutes until liquid is absorbed. Remove from heat and keep covered.
  2. Place green beans in a steamer basket over boiling water and steam for 5 to 6 minutes until tender-crisp. Remove from heat.
  3. To make the sauce, combine Greek yogurt, fresh cilantro, jalapeño pepper, garlic, lime juice, ground cumin, and 1/4 teaspoon of the salt in a blender. Blend until smooth and vibrant green.
  4. Season the pork medallions evenly with black pepper and the remaining 1/4 teaspoon of salt.
  5. Heat the olive oil in a large skillet over medium-high heat. Add the pork medallions and sear for 3 to 4 minutes per side until golden brown and cooked through to an internal temperature of 145°F.
  6. Divide the warm quinoa, steamed green beans, and seared pork medallions among four plates, then spoon the green sauce over the pork to serve.

Notes

Keeps well in airtight meal prep containers for up to 4 days; store the cold sauce separately to drizzle after reheating.
