African Spiced Sausage and Bean Rice

  1. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the sliced smoked sausage and cook for 4-5 minutes, until lightly browned. Remove sausage from skillet and set aside.
  2. Add the chopped yellow onion to the skillet and cook for 3-4 minutes until softened. Stir in the minced garlic, ground cumin, smoked paprika, dried oregano, and cayenne pepper (if using). Cook for 1 minute until fragrant.
  3. Stir in the undrained diced tomatoes, rinsed and drained black beans, rinsed and drained cannellini beans, uncooked white rice, and vegetable broth. Bring the mixture to a boil.
  4. Return the cooked sausage to the skillet. Reduce heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and most of the liquid is absorbed.
  5. Remove from heat and let stand, covered, for 5 minutes. Fluff the mixture with a fork. Season with salt and black pepper to taste. Garnish with fresh cilantro if desired.
  6. Serve directly from the skillet.
