Ingredients
- 1 tablespoon olive oil
- 1 pound smoked sausage (sliced)
- 1 yellow onion (medium, chopped)
- 3 clove garlic (minced)
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 0.5 teaspoon dried oregano
- 0.25 teaspoon cayenne pepper
- 14.5 ounce diced tomatoes (undrained)
- 15 ounce black beans (rinsed and drained)
- 15 ounce cannellini beans (rinsed and drained)
- 1.5 cup white rice
- 2.25 cup vegetable broth
- 0.25 cup fresh cilantro (chopped)
- 1 teaspoon salt (to taste)
- 0.5 teaspoon black pepper (to taste)
Instructions
- Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the sliced smoked sausage and cook for 4-5 minutes, until lightly browned. Remove sausage from skillet and set aside.
- Add the chopped yellow onion to the skillet and cook for 3-4 minutes until softened. Stir in the minced garlic, ground cumin, smoked paprika, dried oregano, and cayenne pepper (if using). Cook for 1 minute until fragrant.
- Stir in the undrained diced tomatoes, rinsed and drained black beans, rinsed and drained cannellini beans, uncooked white rice, and vegetable broth. Bring the mixture to a boil.
- Return the cooked sausage to the skillet. Reduce heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and most of the liquid is absorbed.
- Remove from heat and let stand, covered, for 5 minutes. Fluff the mixture with a fork. Season with salt and black pepper to taste. Garnish with fresh cilantro if desired.
- Serve directly from the skillet.
