- 12 ounce fresh green beans (trimmed and halved)
- 5 flour tortillas (large, or store-bought chapati)
- 0.75 teaspoon salt (divided)
- 0.5 teaspoon black pepper
- 0.25 cup fresh cilantro (chopped)
- 1 tablespoon white vinegar (for salad)
Instructions
- Heat 1 tablespoon olive oil in a large skillet or pot over medium-high heat. Add 1 1/2 pounds ground turkey and the chopped half of 1 medium red onion. Cook, breaking apart the turkey, until browned, about 5 minutes.
- Drain any excess fat. Stir in 3 cloves garlic, 1 teaspoon ground coriander, 1 teaspoon smoked paprika, 1/2 teaspoon ground ginger, and 1/4 teaspoon cayenne pepper (if using). Cook for 1 minute until fragrant.
- Add 1 (14 1/2 ounce) can crushed tomatoes and 1 cup chicken broth. Bring to a simmer, then stir in 12 ounces fresh green beans. Season with 1/2 teaspoon salt and 1/2 teaspoon black pepper. Cover and simmer for 8-10 minutes, or until green beans are tender-crisp and turkey is cooked through.
- While the turkey and beans are simmering, prepare the quick chapati and onion salad. Heat a dry non-stick skillet or griddle over medium-high heat. Warm 5 large flour tortillas one at a time for 30-60 seconds per side until lightly browned and pliable. Stack on a plate and keep warm.
- In a small bowl, combine the thinly sliced half of the red onion, 1/4 cup fresh cilantro, 1 tablespoon white vinegar, and 1/4 teaspoon salt. Toss gently to combine.
- Serve the African spiced ground turkey and green beans hot with the warmed quick chapatis and the onion and cilantro salad on the side.
Notes
If you can find frozen chopped green beans, they will save prep time without sacrificing quality. For a spicier kick, increase the cayenne pepper.
